Cheesy Corndog Casserole

Ingredients:
  • 2 tbsp butter
  • 1 cup chopped celery
  • ¾ cup chopped green onion
  • 8 hot dogs, sliced into 1″ pieces
  • 1 cup milk
  • 2 large eggs
  • 2 tsp mustard
  • 2 tsp hot sauce
  • 2 (8‑oz) packages corn bread mix (like Jiffy®)
  • 8 oz sharp cheddar cheese, shredded (reserve some for topping)
Directions:
  1. Preheat oven to 400°F (200°C). Grease a 3‑quart baking dish.
  2. Melt butter in a skillet over medium‑high heat. Add celery and green onion; cook until softened, about 4 minutes. Transfer to a mixing bowl.
  3. In the same skillet, add hot dog pieces and brown on all sides, about 5 minutes. Transfer with veggies to the bowl.
  4. Stir in milk, eggs, mustard, hot sauce, corn bread mix, and 1½ cups shredded cheddar cheese—some lumps in the batter are fine.
  5. Pour the mixture into the baking dish, spreading evenly. Sprinkle the remaining cheese on top.
  6. Bake until golden and set, 25–30 minutes. The toothpick should come out mostly clean.
  7. Let stand 5–10 minutes before serving.
