Cheesy Corndog Casserole

- 2 tbsp butter
- 1 cup chopped celery
- ¾ cup chopped green onion
- 8 hot dogs, sliced into 1″ pieces
- 1 cup milk
- 2 large eggs
- 2 tsp mustard
- 2 tsp hot sauce
- 2 (8‑oz) packages corn bread mix (like Jiffy®)
- 8 oz sharp cheddar cheese, shredded (reserve some for topping)
- Preheat oven to 400°F (200°C). Grease a 3‑quart baking dish.
- Melt butter in a skillet over medium‑high heat. Add celery and green onion; cook until softened, about 4 minutes. Transfer to a mixing bowl.
- In the same skillet, add hot dog pieces and brown on all sides, about 5 minutes. Transfer with veggies to the bowl.
- Stir in milk, eggs, mustard, hot sauce, corn bread mix, and 1½ cups shredded cheddar cheese—some lumps in the batter are fine.
- Pour the mixture into the baking dish, spreading evenly. Sprinkle the remaining cheese on top.
- Bake until golden and set, 25–30 minutes. The toothpick should come out mostly clean.
- Let stand 5–10 minutes before serving.
