Sheet-Pan Gnocchi with Sausage and Peppers

One pan, all the flavor—this hearty dish brings together tender bites, smoky sausage, and a touch of comfort in every forkful.

Ingredients:
  • 1 medium green pepper, thinly sliced
  • 1 medium sweet red pepper, thinly sliced
  • 1 medium sweet yellow pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 package (16 ounces) potato gnocchi
  • 1 pound hot or sweet Italian sausage links, casings removed
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Fresh lemon juice and chopped fresh parsley or basil, for serving, optional
Method:
  1. Heat your oven to 425°F. Take a greased 15x10x1-inch baking pan and combine the peppers, onion, gnocchi, olive oil, oregano, salt, and pepper right on the pan. Spread the mixture into a single layer, then place the sausage in small dollops around the pan.
  2. Bake for 15 minutes. Take the pan out and give everything a good stir. Return it to the oven for another 10-15 minutes, until the sausage is completely cooked and the vegetables have softened.
  3. Stir the grated Parmesan into the hot pan mixture.
  4. To serve, finish with a squeeze of fresh lemon juice and a garnish of chopped parsley or basil. Add more Parmesan on top, if you like.
