- 1 medium green pepper, thinly sliced
- 1 medium sweet red pepper, thinly sliced
- 1 medium sweet yellow pepper, thinly sliced
- 1 medium onion, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- 1/2 teaspoon pepper
- 1 package (16 ounces) potato gnocchi
- 1 pound hot or sweet Italian sausage links, casings removed
- 1/4 cup grated Parmesan cheese, plus more for serving
- Fresh lemon juice and chopped fresh parsley or basil, for serving, optional
- Heat your oven to 425°F. Take a greased 15x10x1-inch baking pan and combine the peppers, onion, gnocchi, olive oil, oregano, salt, and pepper right on the pan. Spread the mixture into a single layer, then place the sausage in small dollops around the pan.
- Bake for 15 minutes. Take the pan out and give everything a good stir. Return it to the oven for another 10-15 minutes, until the sausage is completely cooked and the vegetables have softened.
- Stir the grated Parmesan into the hot pan mixture.
- To serve, finish with a squeeze of fresh lemon juice and a garnish of chopped parsley or basil. Add more Parmesan on top, if you like.
