Skillet Slaw

When weeknights are busy, this Weeknight Skillet Slaw is your go-to: ground turkey, crisp coleslaw mix, peppers, scallions, and a tangy sauce come together in just 25 minutes for a vibrant, protein-packed meal 🍽️🌶️

Ingredients:
  • 1 tablespoon chipotle hot sauce (such as Cholula®)
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1½ teaspoons minced ginger
  • 1 teaspoon agave syrup
  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil
  • 1 pound ground turkey
  • ½ teaspoon salt
  • ½ tablespoon ground black pepper
  • 8 oz package of coleslaw mix
  • ½ red bell pepper, diced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon sesame seeds
Directions:
  1. In a small bowl, whisk together chipotle hot sauce, rice vinegar, soy sauce, ginger, and agave to make the sauce.
  2. Heat olive oil and sesame oil in a large skillet over medium heat. Add ground turkey and cook until juices run clear, about 6 minutes. Season with salt and pepper.
  3. Transfer the turkey to a bowl, leaving juices in the skillet.
  4. Add coleslaw mix, diced red pepper, green onions, and garlic to the skillet; cook until the slaw begins to wilt, about 1–2 minutes.
  5. Stir in the sauce, mixing until veggies are coated, about 1 minute.
  6. Return turkey to the pan, toss until heated through, 2–3 minutes.
  7. Sprinkle with sesame seeds before serving.
