Warm, hearty, and bursting with flavor, this easy taco soup is like a hug in a bowl! Packed with seasoned beef, beans, and zesty tomatoes, it’s the perfect one-pot meal to keep you cozy and satisfied. Top it off with a dollop of sour cream and a sprinkle of green onions for extra goodness!
Ingredients:
2 lbs ground beef
1 packet taco seasoning
1 ½ cups water
1 can (16 oz) mild chili beans, undrained
1 can (15 ¼ oz) whole kernel corn, drained
1 can (15 oz) pinto beans, rinsed and drained
1 can (14 ½ oz) stewed tomatoes
1 can (10 oz) diced tomatoes with green chiles
1 can (4 oz) chopped green chiles (optional)
1 packet ranch dressing mix
Optional toppings: sour cream, chopped green onions

Directions:
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned, crumbling as it cooks. Drain excess grease.
- Stir in taco seasoning, then add water and all remaining ingredients. Mix well.
- Bring to a boil, then reduce heat and let simmer uncovered for 15 minutes, stirring occasionally.
- Serve hot, topped with sour cream and green onions if desired. Enjoy!
