Chicken Veggie Packets

Dinner doesn’t get much easier—or tastier—than these chicken packets, packed with colorful veggies and sealed in foil for a tender, juicy meal. It’s like a little surprise gift from your oven!

Ingredients:
  • 4 boneless, skinless chicken breast halves (4 ounces each)
  • 1/2 pound fresh mushrooms, sliced
  • 1 1/2 cups baby carrots
  • 1 cup pearl onions
  • 1/2 cup sweet red pepper, julienned
  • 1/4 teaspoon black pepper
  • 3 teaspoons fresh thyme, minced
  • 1/2 teaspoon salt (optional)
  • Lemon wedges (optional)

Directions:
  1. Preheat oven to 375°F. Pound chicken breasts to 1/2-inch thickness and place each piece on a 12-inch square of heavy-duty foil.
  2. Layer the veggies. Top the chicken with mushrooms, carrots, onions, and red peppers. Sprinkle with pepper, thyme, and salt if desired.
  3. Seal it up. Fold the foil tightly around the chicken and vegetables, creating a sealed packet.
  4. Bake for 20 minutes or until the chicken is cooked through and the juices run clear.
  5. Serve with lemon wedges for a bright, zesty finish if you like.
