- 1/2 pound fresh mushrooms, sliced
- 1 1/2 cups baby carrots
- 1 cup pearl onions
- 1/2 cup sweet red pepper, julienned
- 1/4 teaspoon black pepper
- 3 teaspoons fresh thyme, minced
- 1/2 teaspoon salt (optional)
- Lemon wedges (optional)
Directions:
- Preheat oven to 375°F. Pound chicken breasts to 1/2-inch thickness and place each piece on a 12-inch square of heavy-duty foil.
- Layer the veggies. Top the chicken with mushrooms, carrots, onions, and red peppers. Sprinkle with pepper, thyme, and salt if desired.
- Seal it up. Fold the foil tightly around the chicken and vegetables, creating a sealed packet.
