Ingredients:
- 2 pounds chicken breast
- 1 head of Bibb or Boston lettuce (leaves separated and washed)
- Sesame seeds, for garnish (optional)
- ½ cup hoisin sauce
- 2 tablespoons rice vinegar
- 1 teaspoon fresh ginger, minced
- 4 cloves garlic, minced
- 3 tablespoons low-sodium soy sauce
- 2 teaspoons sriracha (adjust to taste)
- In a small bowl, stir together all the sauce ingredients.
- Pour half of the sauce into a large zip-top bag. Set the remaining sauce aside.
- Add the chicken breasts to the bag, seal, and shake gently to coat.
- Let the chicken marinate in the fridge for at least 1 hour (overnight is even better).
- When ready to cook, preheat your grill to 400°F and lightly grease the grates.
- Remove chicken from the marinade and grill for about 4–6 minutes per side, depending on thickness, until fully cooked.
- Let the chicken rest a few minutes, then chop it into bite-sized pieces.
- While the chicken rests, warm the reserved sauce in a saucepan over medium heat.
- Toss the chopped chicken in the warm sauce until well coated.
- Spoon into lettuce leaves, sprinkle with sesame seeds if you like, and enjoy right away!
