Ingredients:
- 4 chicken cutlets (1 lb)
- 1/2 cup flour
- 8 oz sliced mushrooms
- 1/2 cup Marsala wine
- 1 cup chicken broth
- 2 tbsp butter
- 2 tbsp olive oil
- Salt and pepper
- Season chicken; dredge in flour.
- Heat oil and 1 tbsp butter. Cook chicken 3-4 mins/side; remove.
- Sauté mushrooms; add wine, simmer for 2 mins.
- Add broth; return chicken. Simmer for 5 mins.
- Stir in remaining butter.
