Zucchini Patties
Looking for a way to use up that bumper crop of zucchini? These golden, crispy Zucchini Patties are just the thing. Light, flavorful, and easy to make, they’re a wonderful side dish—or a main if you stack them high and pair with a fresh salad.

- 2 cups grated zucchini
- 2 eggs, beaten
- ¼ cup chopped onion
- ½ cup all-purpose flour
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- Salt to taste
- 2 tablespoons vegetable oil
- In a large bowl, combine the grated zucchini, beaten eggs, chopped onion, flour, Parmesan, and mozzarella. Season lightly with salt and mix well.
- Heat the vegetable oil in a skillet over medium-high heat.
- Scoop about a tablespoon of the zucchini mixture for each patty and drop it gently into the hot skillet.
- Flatten slightly with the back of a spoon and cook until golden brown, about 2–3 minutes per side.
- Transfer to a paper towel-lined plate to drain any excess oil.
- Serve warm, perhaps with a dollop of sour cream or a squeeze of lemon for extra brightness.
