Zucchini Patties

Looking for a way to use up that bumper crop of zucchini? These golden, crispy Zucchini Patties are just the thing. Light, flavorful, and easy to make, they’re a wonderful side dish—or a main if you stack them high and pair with a fresh salad. 🥒

Ingredients:
  • 2 cups grated zucchini
  • 2 eggs, beaten
  • ¼ cup chopped onion
  • ½ cup all-purpose flour
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • Salt to taste
  • 2 tablespoons vegetable oil
Directions:
  1. In a large bowl, combine the grated zucchini, beaten eggs, chopped onion, flour, Parmesan, and mozzarella. Season lightly with salt and mix well.
  2. Heat the vegetable oil in a skillet over medium-high heat.
  3. Scoop about a tablespoon of the zucchini mixture for each patty and drop it gently into the hot skillet.
  4. Flatten slightly with the back of a spoon and cook until golden brown, about 2–3 minutes per side.
  5. Transfer to a paper towel-lined plate to drain any excess oil.
  6. Serve warm, perhaps with a dollop of sour cream or a squeeze of lemon for extra brightness.
