- ¼ cup drained julienne-cut sun-dried tomatoes (packed in oil with herbs)
 - ½ Tbsp oil from sun-dried tomato jar, divided
 - ¾ cup chopped yellow onion
 - 2 medium garlic cloves, minced (about 4 tsp)
 - 1 ½ Tbsp tomato paste
 - 1 (32-oz) package chicken broth
 - ½ cup heavy whipping cream
 - 2 tsp chopped fresh basil (plus extra for garnish, optional)
 - 1 tsp kosher salt
 - ¾ tsp dried Italian seasoning
 - ½ tsp garlic powder
 - ⅛ tsp crushed red pepper (plus extra for garnish)
 - 4 oz uncooked medium shell pasta
 - 1 ½ cups roughly chopped fresh baby spinach
 - 1 cup shredded rotisserie chicken
 - 4 oz cream cheese, cubed, room temperature
 - ¾ oz Parmesan cheese, finely shredded (plus extra for garnish)
 
- Sauté the base. Heat ½ Tbsp of oil from the sun-dried tomato jar in a large Dutch oven over medium heat until shimmering. Add onion and garlic; cook, stirring often, until softened (3–4 minutes).
 - Add flavor. Stir in tomato paste and sun-dried tomatoes; cook, stirring constantly, until the paste turns a deeper red (about 2 minutes).
 - Build the broth. Pour in chicken broth, cream, basil, salt, Italian seasoning, garlic powder, and crushed red pepper. Bring to a boil over medium, stirring occasionally (about 12 minutes).
 - Cook the pasta. Add pasta; reduce heat to medium-low and cook, stirring occasionally, until pasta is al dente (about 12 minutes).
 - Finish with the good stuff. Lower heat to low. Stir in spinach, chicken, cream cheese, and Parmesan. Cook, stirring often, until cheeses are melted and chicken is heated through (about 5 minutes).
 - Serve and enjoy. Garnish with extra Parmesan, basil, and crushed red pepper. Serve hot.
