Beets. Now I eat them regularly and actually enjoy them.
Thanks for sharing that @Cindy k ! Beets are such a great choice — they’ve got that lovely earthy sweetness once you get used to them. Do you prefer them roasted, pickled, or maybe sliced fresh in a salad?

Peas...yuck! Still won't, but like all other veggies.
Thanks for sharing that @Debthina ! 😂 Sounds like peas never quite made it off your “no” list! Was it the texture or the taste that turned you off them? At least it’s great that you enjoy all the other veggies — do you have a favorite these days?

Brusse Sprouts and Asparagus 😋Still won’t eat Lima Beans🤢
Thanks for sharing that @terriespell ! 😄 Brussels sprouts and asparagus definitely deserve a second chance — they’re so tasty when roasted or grilled! Lima beans, though, I know they can be a tough sell. What changed your mind about the sprouts and asparagus?

Back then all veggies were fine with me , except cooked carrots. Not I like them cooks. raw was of back then, just not cooked. and ocra. didn't like it them and I dont now
Thanks for sharing that @tennis ! It’s funny how our taste buds evolve — cooked carrots can be so sweet and comforting once you start liking them! 😊 Sounds like okra still hasn’t won you over though. Have you ever tried it in a different way, like roasted or in a curry?

I can’t think of any, if it was put on your plate you ate it or didn’t eat
Thanks for sharing that @Wiseoldone ! Sounds like you grew up with the “eat what’s on your plate” rule — a lot of us can relate to that! 😄 Were there any veggies you secretly hoped wouldn’t show up at dinner time?

I hate mixed vegetables then and now but will eat them separately.
Thanks for sharing that @NIBOR0 ! That makes total sense — the flavors can really mix together in those frozen veggie blends. 😄 Do you have a favorite veggie when they’re served on their own?

Brussels Sprouts. My mom made them and they were so dry. I had to eat them before I could leave the table. Most times, I was the only one at the table for a very long time. Absolutely love them now, in any form!
Thanks for sharing that @GaryBlake ! 😄 What a great story — it’s amazing how a change in cooking can make such a difference! Brussels sprouts are so much better when they’re roasted or sautéed, aren’t they? Do you have a favorite way to prepare them now?

Turnips, mustard greens or spinach. Hated them as a child and teenager, and I absolutely love them now.
Thanks for sharing that @Justme ! It’s amazing how our tastes change over time — those are some bold-flavored veggies to grow into! 😊 Do you have a favorite way to cook them now, like sautéed with a bit of butter or added to soups and stews?

Mushroom and asparagus- now eat if made correctly.
I basically love all vegetables except Ochre and Swiss chard.
Thanks for sharing that @Hazeleyes ! Sounds like your palate has really expanded — mushrooms and asparagus can be delicious when cooked just right. 😋 I’m curious, what’s your favorite way to have them? And has anyone ever managed to make okra or Swiss chard in a way you’ve enjoyed?

Asparagus! As a child I thought of it as a limp, disgusting part of a quiche. Now I love it roasted as an alternative to potatoes!
Thanks for sharing that @CSChapman ! 😄 That’s such a great turnaround — roasted asparagus is such a tasty and healthy swap for potatoes! Do you season it with anything special when you roast it, like garlic or parmesan?

I hated Brussel sprouts. You had to finish them or you were not excused from the table. If you couldn’t force them down by bedtime you to look forward (NOT) to them the next morning. The 3 of us kids also pawned them off to the dog. That was until she threw them up. So much for a good thing for us. I still don’t like them no way, no how!
I never enjoyed cooked green peppers. I love all colors raw! I eat the all of them raw as snacks including the green ones. Never any hot peppers! Lima beans have never been my friend.
I guess I never learned to enjoy anything now that I hated then. I love summer squashes but not the winter squashes. We didn’t care at all about liver and onions. My 2 brothers grew to like it though. I let my husband know that if he ever wanted that he would have to go to a restaurant for it! Poor guy.
Thanks for sharing that @Gayle B. — what a story! 😄 I can just picture the poor dog giving away your secret plan with those Brussels sprouts. It’s great that you enjoy raw peppers, though — they’re so crunchy and sweet! Do you grow any of your own veggies these days, or just pick them up fresh from the market?

broccoli, asparagus and Brussel sprouts - love them all now!
Thanks for sharing that @harrimiller ! 😊 Those three are such popular “grown-up favorites” — especially when they’re roasted or tossed with a bit of garlic and olive oil. Do you have a go-to way to cook them, or do you like mixing them into meals?

Parsnips, I hated them as a child . Now I love them. Roasted with butter or with ham.
Thanks for sharing that @TammyK ! 😊 Roasted parsnips with butter sound absolutely delicious — they get that lovely caramelized sweetness. Do you usually make them for special meals, or are they a regular on your dinner table now?

I hated spinach and Brussel sprouts as a kid. Now I love them both!
Thanks for sharing that @Larry B ! 😊 Those two seem to be childhood enemies turned adult favorites for a lot of people! Do you have a favorite way to enjoy them now — maybe sautéed spinach or roasted Brussels sprouts?
