Ingredients (makes 8 bars):
  • ¾ cup old‑fashioned rolled oats
  • ½ cup smooth natural cashew butter
  • ⅓ cup almond flour
  • 2 tablespoons mini semisweet chocolate chips
  • 2 teaspoons unsweetened cocoa powder
  • 1 tablespoon pure maple syrup
  • 2 teaspoons vanilla extract
  • 1 tablespoon coconut oil
  • ⅓ cup chopped dry‑roasted cashews, salted
  • 5 tablespoons hemp seeds
  • 3 tablespoons water
Directions:
  1. In a large bowl, mix oats, almond flour, chocolate chips, cocoa powder, cashews, and hemp seeds.
  2. In a heatproof bowl, combine cashew butter, maple syrup, vanilla, coconut oil, and water. Microwave until the coconut oil melts (~40 seconds), then stir until smooth.
  3. Pour the wet mixture over the oat mixture and stir until evenly combined.
  4. Line an 8½×4½‑inch loaf pan with plastic wrap. Press the mixture firmly into the pan in an even layer.
  5. Freeze uncovered until firm, about 40 minutes. Remove from pan, peel off plastic, and cut into eight 1‑inch bars.
  6. Store in an airtight container in the fridge for up to 4 days—or freeze for longer storage.
