4-Ingredient Peanut Butter Noodles

This Peanut Butter Noodles recipe is a lifesaver for those busy or lazy days. With just four main ingredients and a splash of boiling water, you can whip up a creamy, savory, and slightly spicy dish in about 15 minutes. It's versatile, satisfying, and perfect for a quick lunch or dinner. 🥜🍜

Ingredients:
  • Salt, for the pasta water
  • 1 pound spaghetti, linguine, or any other long noodles
  • Generous â…“ cup no-stir creamy peanut butter
  • ÂĽ cup sweet Thai chili sauce, plus more to taste
  • 2 tablespoons soy sauce, plus more to taste
  • ÂĽ cup boiling water
  • Optional toppings: sliced green onions, chopped cilantro, and/or toasted sesame seeds
Directions:
  1. Bring a large pot of salted water to a boil. Cook the noodles to al dente according to package instructions.
  2. Drain the noodles in a colander and rinse with cool water until they’re no longer hot.
  3. While the noodles cook, prepare the sauce: In a large bowl, whisk together peanut butter, chili sauce, soy sauce, and boiling water (straight from the pot works well). Whisk until smooth, about 1 minute. The sauce should be thick but pourable. Taste and adjust—add more soy sauce if you want it saltier, more chili sauce for extra sweetness.
  4. Add the cooled noodles to the bowl. Use tongs to toss them in the sauce until evenly coated.
  5. Transfer to serving bowls. Top with green onions, cilantro, and sesame seeds if desired.
  6. Enjoy immediately, or refrigerate for up to 3 days. If needed, rehydrate leftovers with a splash of boiling water to loosen the sauce.
