4-Ingredient Peanut Butter Noodles

Ingredients:
- Salt, for the pasta water
- 1 pound spaghetti, linguine, or any other long noodles
- Generous â…“ cup no-stir creamy peanut butter
- ÂĽ cup sweet Thai chili sauce, plus more to taste
- 2 tablespoons soy sauce, plus more to taste
- ÂĽ cup boiling water
- Optional toppings: sliced green onions, chopped cilantro, and/or toasted sesame seeds
- Bring a large pot of salted water to a boil. Cook the noodles to al dente according to package instructions.
- Drain the noodles in a colander and rinse with cool water until they’re no longer hot.
- While the noodles cook, prepare the sauce: In a large bowl, whisk together peanut butter, chili sauce, soy sauce, and boiling water (straight from the pot works well). Whisk until smooth, about 1 minute. The sauce should be thick but pourable. Taste and adjust—add more soy sauce if you want it saltier, more chili sauce for extra sweetness.
- Add the cooled noodles to the bowl. Use tongs to toss them in the sauce until evenly coated.
- Transfer to serving bowls. Top with green onions, cilantro, and sesame seeds if desired.
- Enjoy immediately, or refrigerate for up to 3 days. If needed, rehydrate leftovers with a splash of boiling water to loosen the sauce.
