5-Ingredient Buffalo Stuffed Peppers

Ingredients:
  • 1½ cups shredded rotisserie chicken
  • ⅓ cup plain Greek yogurt
  • ⅓ cup Buffalo sauce
  • 2 bell peppers, halved, stems and seeds removed
  • ⅓ cup crumbled blue cheese
  • Optional: carrot and celery sticks, for serving
Directions:
  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, toss the chicken with Buffalo sauce and Greek yogurt until well coated.
  3. Place the pepper halves in a baking dish that has been sprayed with cooking spray. Evenly fill each with the chicken mixture.
  4. Pour in about ¼ inch of water at the bottom of the dish to steam the peppers.
  5. Bake uncovered for about 30 minutes, until the peppers are tender and filling is heated through.
  6. Top with crumbled blue cheese. Serve with carrot and celery sticks on the side, if desired.
