- 1½ cups shredded rotisserie chicken
- ⅓ cup plain Greek yogurt
- ⅓ cup Buffalo sauce
- 2 bell peppers, halved, stems and seeds removed
- ⅓ cup crumbled blue cheese
- Optional: carrot and celery sticks, for serving
- Preheat oven to 375°F (190°C).
- In a medium bowl, toss the chicken with Buffalo sauce and Greek yogurt until well coated.
- Place the pepper halves in a baking dish that has been sprayed with cooking spray. Evenly fill each with the chicken mixture.
- Pour in about ¼ inch of water at the bottom of the dish to steam the peppers.
- Bake uncovered for about 30 minutes, until the peppers are tender and filling is heated through.
- Top with crumbled blue cheese. Serve with carrot and celery sticks on the side, if desired.
