8-Minute Lebanese Pizza (Chicken Mince)

This Middle Eastern-inspired dish delivers bold flavors in record time, perfect for busy weeknights!

Ingredients:
  • 500g (1 lb) chicken mince
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp cinnamon
  • ½ tsp allspice
  • 2 tbsp tomato paste
  • 2 tbsp pine nuts (optional)
  • 2 tbsp olive oil
  • Flatbread or pita for serving
  • Fresh parsley and lemon wedges to garnish
Directions:
  1. Heat oil in a large skillet over high heat. Cook onion for 1 minute until translucent.
  2. Add chicken mince, breaking it up as it cooks (about 2 minutes).
  3. Stir in garlic, spices and tomato paste; cook for 1 minute until fragrant.
  4. Add pine nuts (if using) and cook for 1 more minute.
  5. Serve immediately over flatbread, garnished with parsley and lemon.
