Air Fryer Baklava Granola

Ingredients

1 cup old-fashioned oats
1/2 cup chopped raw walnuts
1/3 cup honey
3 Tbsp. coconut oil, melted
1 tsp. ground cinnamon
1/2 tsp. kosher salt
1 cup chopped roasted pistachios, divided

Methods

  1. In a large bowl, combine oats, walnuts, honey, oil, cinnamon, salt, and 3/4 cup pistachios.
  2. Line an air fryer basket with a small piece of parchment, leaving some of the vent holes in the basket exposed. (You can also use an air fryer basket liner.) Add oat mixture in a single layer.
  3. Cook oats at 325°, stirring halfway through, until deep golden brown and mixture is fragrant, 15 to 18 minutes. Stir in the remaining 1/4 cup pistachios. Let cool in air fryer for 15 to 20 minutes
  4. Break into small pieces. Granola will harden as it continues to cool. Transfer to an airtight container and store for up to 2 weeks.

It looks great. Just putting this out there I’m a diabetic as I guess some of you are as well. I love sweets, always have. I would love to see some diabetic recipes for sweet treats.
