Air Fryer Baklava Granola

1 cup old-fashioned oats
1/2 cup chopped raw walnuts
1/3 cup honey
3 Tbsp. coconut oil, melted
1 tsp. ground cinnamon
1/2 tsp. kosher salt
1 cup chopped roasted pistachios, divided

Methods
- In a large bowl, combine oats, walnuts, honey, oil, cinnamon, salt, and 3/4 cup pistachios.
- Line an air fryer basket with a small piece of parchment, leaving some of the vent holes in the basket exposed. (You can also use an air fryer basket liner.) Add oat mixture in a single layer.
- Cook oats at 325°, stirring halfway through, until deep golden brown and mixture is fragrant, 15 to 18 minutes. Stir in the remaining 1/4 cup pistachios. Let cool in air fryer for 15 to 20 minutes
- Break into small pieces. Granola will harden as it continues to cool. Transfer to an airtight container and store for up to 2 weeks.
