- ½ cup Italian-style bread crumbs
- ¼ cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon dried basil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- ¼ cup all-purpose flour
- 2 large eggs, beaten
- 1 medium eggplant, sliced into ½-inch rounds
- 1 cup marinara sauce (or more to taste)
- 8 slices mozzarella cheese (or enough to cover each round)
Directions:
- In one shallow bowl, mix the bread crumbs, Parmesan, Italian seasoning, salt, basil, garlic powder, onion powder, and pepper.
- Set up two more shallow bowls: one with flour and one with the beaten eggs.
- Dip each eggplant slice in flour, then egg, then coat with the seasoned breadcrumb mixture. Let them rest on a tray for 5 minutes.
- Preheat your air fryer to 370°F.
- Arrange the breaded eggplant slices in the air fryer basket (don’t overcrowd—work in batches if needed). Cook for 8–10 minutes, flip, and cook another 4–6 minutes until crispy.
- Top each round with a spoonful of marinara and a slice of mozzarella. Return to the air fryer for 1–2 minutes until the cheese melts.
