Apple Cider Donuts

Get ready to fall in love with these cozy Apple Cider Donuts! Bursting with warm spices and a hint of cider sweetness, they’re the perfect treat to satisfy your autumn cravings!
Ingredients:
Cooking spray
1 cup apple cider
2 cups (240g) all-purpose flour
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
3 1/2 teaspoons ground cinnamon, divided
3/4 cup vegetable oil
1/2 cup (105g) packed dark brown sugar
1 cup (200g) granulated sugar, divided
1 large egg
6 tablespoons unsalted butter, melted
Method:
1. Preheat the oven to 350°F and grease two donut pans with cooking spray. In a small pot, bring the apple cider to a boil over medium heat. Let it simmer until reduced to about 1/2 cup (this should take 10 to 15 minutes), then set it aside to cool.
2. In the meantime, whisk together the flour, baking powder, salt, nutmeg, ginger, and 2 teaspoons of cinnamon in a medium bowl.
3. In a large bowl, mix the oil, brown sugar, and 1/2 cup granulated sugar until combined. Whisk in the egg, followed by the dry ingredients and cooled apple cider until just mixed.
4. Transfer the batter into a piping or plastic bag, snip off the tip, and pipe the batter into the donut pans (or spoon it in) until each cavity is about three-quarters full.
5. Bake for 12 to 15 minutes, until the tops are dry. Let the donuts cool for 5 minutes, then gently remove them onto a wire rack.
6. In a shallow bowl, mix the remaining 1/2 cup granulated sugar with 1 1/2 teaspoons of cinnamon. While the donuts are still warm, brush them with melted butter and toss them in the cinnamon sugar mixture. Enjoy!
