1 cup dry hard cider

2 Granny Smith apples, thinly sliced
8 challah buns, split

Method:
- Preheat oven to 325°F. Season pork with chili powder, paprika, and 1 tsp salt.
- Brown the pork: Heat 1 1/2 Tbsp oil in a large Dutch oven over medium-high heat. Brown the pork in batches, 3-4 minutes per side. Remove and set aside. Wipe out the pot.
- Cook onions and garlic: Add the remaining 1/2 Tbsp oil to the Dutch oven over medium heat. Cook half the onions, stirring occasionally, for 4-5 minutes until tender. Add garlic and cook for 1 minute. Stir in hard cider and reduce by half, about 4-5 minutes.
- Simmer the pork: Add applesauce, apple cider, thyme, bay leaves, and 1 tsp salt to the pot. Return the pork and its juices, bring to a simmer, cover, and bake for 2 hours. Uncover and bake for an additional 30 minutes to 1 hour, until the pork is tender and shreds easily. Discard thyme and bay leaves, shred pork, and stir in 2 Tbsp vinegar. Toss with cooking juices.
- Make the slaw: In a bowl, toss cabbage, apples, remaining onion, 3 Tbsp vinegar, and 1/2 tsp each salt and pepper. Refrigerate until ready to serve.
- Assemble sandwiches: Serve pulled pork on challah buns with slaw and pickles on the side if desired.
