Ingredients:
  • 1½ pounds skinless, boneless chicken breasts (about 4)
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons unsalted butter
  • 4 carrots, cut into ½-inch pieces
  • 1 bunch asparagus (about 1 pound), trimmed and cut into 2-inch pieces
  • 12 ounces snow peas, trimmed (about 2½ cups)
  • 3 tablespoons apricot preserves
  • 4 teaspoons Dijon mustard
  • 4 scallions, chopped
  • 1 tablespoon fresh tarragon, chopped
  • 1 teaspoon finely grated lemon zest

Directions:
  1. Cut each chicken breast into 4 or 5 large chunks. Season with salt and pepper.
  2. Heat a large nonstick skillet over medium-high heat and add the olive oil.
Sauté the chicken, turning occasionally, until browned and nearly cooked through, about 4–6 minutes. Transfer to a plate.
  3. Add 1 tablespoon butter to the skillet and reduce heat to medium.
Add carrots and ½ cup water. Cover and simmer for 3–4 minutes, until just tender.
Uncover and cook 1 more minute until the water evaporates.
  4. Reduce heat to medium. Add the remaining tablespoon of butter.
Stir in asparagus, snow peas, and ¼ teaspoon salt. Cover and cook about 3 minutes, until veggies are crisp-tender.
  5. Return chicken to the skillet. Stir in apricot preserves, Dijon mustard, scallions, tarragon, and lemon zest.
Simmer, tossing gently, until everything is coated and the glaze is warmed through.
  6. Taste and adjust salt and pepper as needed. Serve warm.
