Ingredients:
- 1½ pounds skinless, boneless chicken breasts (about 4)
- Kosher salt and freshly ground black pepper
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons unsalted butter
- 4 carrots, cut into ½-inch pieces
- 1 bunch asparagus (about 1 pound), trimmed and cut into 2-inch pieces
- 12 ounces snow peas, trimmed (about 2½ cups)
- 3 tablespoons apricot preserves
- 4 teaspoons Dijon mustard
- 4 scallions, chopped
- 1 tablespoon fresh tarragon, chopped
- 1 teaspoon finely grated lemon zest
Directions:
- Cut each chicken breast into 4 or 5 large chunks. Season with salt and pepper.
- Heat a large nonstick skillet over medium-high heat and add the olive oil.
Sauté the chicken, turning occasionally, until browned and nearly cooked through, about 4–6 minutes. Transfer to a plate. - Add 1 tablespoon butter to the skillet and reduce heat to medium.
Add carrots and ½ cup water. Cover and simmer for 3–4 minutes, until just tender.
Uncover and cook 1 more minute until the water evaporates. - Reduce heat to medium. Add the remaining tablespoon of butter.
Stir in asparagus, snow peas, and ¼ teaspoon salt. Cover and cook about 3 minutes, until veggies are crisp-tender. - Return chicken to the skillet. Stir in apricot preserves, Dijon mustard, scallions, tarragon, and lemon zest.
Simmer, tossing gently, until everything is coated and the glaze is warmed through. - Taste and adjust salt and pepper as needed. Serve warm.
