Ingredients:
- 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
- 9 lasagna noodles
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 (15 ounce) container ricotta cheese
- 1 egg
- ½ cup grated Parmesan cheese
- 3 cups shredded mozzarella cheese
- Salt and pepper to taste
- Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles for 8 to 10 minutes. Drain and rinse with cold water.
- In a medium saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and cook, stirring, until thickened. Season with salt and pepper.
- In a bowl, mix ricotta cheese, egg, and Parmesan until well combined.
- To assemble: Spread a thin layer of white sauce in the dish. Layer with noodles, half the ricotta mixture, half the asparagus, a third of the mozzarella, and more sauce. Repeat layers. Top with remaining noodles, sauce, and mozzarella.
- Cover with foil and bake for 40 minutes. Remove foil and bake 10 more minutes, until bubbly and golden. Let stand 10 minutes before serving.
