Asparagus Turkey Stir-Fry

This Asparagus Turkey Stir-Fry is light, colorful, and full of flavor. Tender turkey, crisp asparagus, and a bright lemon sauce make it a dish worth savoring — simple to prepare, but special enough to enjoy any day of the week.

Ingredients:
  • 2 teaspoons cornstarch
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice
  • 1 teaspoon soy sauce
  • 1 pound turkey breast tenderloins, cut into 1/2-inch strips
  • 1 garlic clove, minced
  • 2 tablespoons canola oil, divided
  • 1 pound fresh asparagus, trimmed and cut into 1-1/2-inch pieces
  • 1 jar (2 ounces) sliced pimientos, drained

Directions:
  1. In a small bowl, whisk together the cornstarch, broth, lemon juice, and soy sauce until smooth. Set aside.
  2. In a large skillet or wok, heat 1 tablespoon oil. Stir-fry turkey and garlic until the turkey is no longer pink. Remove from pan and keep warm.
  3. Add remaining oil to the skillet. Stir-fry asparagus until crisp-tender, then add pimientos.
  4. Stir the broth mixture and pour into the pan. Cook and stir for about 1 minute, until the sauce thickens.
  5. Return turkey to the skillet; toss everything together until heated through. Serve warm.
