Authentic Louisiana Red Beans and Rice

This Authentic Louisiana Red Beans and Rice recipe brings all the warmth and soul of Southern cooking straight to your kitchen.

Ingredients:
  • 1 pound dry red beans
  • ¼ cup olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 tablespoons minced garlic
  • 6 cups water
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon cayenne pepper (optional)
  • 1 pound Andouille sausage, sliced
  • 4 cups cooked white rice
Directions:
  1. Rinse and soak the red beans overnight in a large bowl of water. Drain and rinse again before cooking.
  2. In a large pot, heat olive oil over medium heat. Add onion, bell pepper, celery, and garlic. Sauté until vegetables are soft and fragrant, about 5 minutes.
  3. Add the soaked beans, water, bay leaves, thyme, sage, Cajun seasoning, and cayenne pepper (if using). Stir to combine.
  4. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 2 to 2½ hours, stirring occasionally, until beans are tender and creamy.
  5. In a skillet, cook sliced Andouille sausage over medium heat until browned. Add to the beans during the last 30 minutes of simmering.
  6. Remove bay leaves. Taste and adjust seasoning if needed.
  7. Serve hot over a bed of fluffy white rice.
