Ingredients:
- 1 pound dry red beans
- ¼ cup olive oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 2 tablespoons minced garlic
- 6 cups water
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1 teaspoon Cajun seasoning
- ½ teaspoon cayenne pepper (optional)
- 1 pound Andouille sausage, sliced
- 4 cups cooked white rice
- Rinse and soak the red beans overnight in a large bowl of water. Drain and rinse again before cooking.
- In a large pot, heat olive oil over medium heat. Add onion, bell pepper, celery, and garlic. Sauté until vegetables are soft and fragrant, about 5 minutes.
- Add the soaked beans, water, bay leaves, thyme, sage, Cajun seasoning, and cayenne pepper (if using). Stir to combine.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 2 to 2½ hours, stirring occasionally, until beans are tender and creamy.
- In a skillet, cook sliced Andouille sausage over medium heat until browned. Add to the beans during the last 30 minutes of simmering.
- Remove bay leaves. Taste and adjust seasoning if needed.
- Serve hot over a bed of fluffy white rice.
