Ingredients:
- 3 Tbsp. unsalted butter
- 1 medium Honeycrisp or Ambrosia apple, cored and cut into 3/8-in.-thick slices (about 1 1/2 cups)
- 1/3 cup packed light brown sugar
- 1/2 tsp. orange zest plus 1/4 cup fresh juice (from 1 orange)
- 3 Tbsp. bourbon
- 1 8.8-oz. Brie round (1 1/4 in. thick)
- 2 Tbsp. chopped roasted unsalted pistachios
- Crackers and/or crostini, for serving
Method:
- Preheat oven: Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cook apples in a skillet: Melt butter in a medium nonstick skillet over medium until bubbly. Add apple; cook, stirring and flipping occasionally, until slightly browned and softened, about 5 minutes. Stir in sugar, orange zest, and orange juice. Cook, stirring, until sugar dissolves and apple is tender, 3 to 4 minutes.
- Add the bourbon: Carefully add bourbon; cook over medium, stirring often, until alcohol smell fades and sauce has a syrupy consistency, about 2 minutes. (Be careful if using a gas stove; mixture may light on fire. If it does, cook until flame goes out.)
- Bake the Brie: Meanwhile, place Brie round on prepared baking sheet. Bake until soft to
- the touch, about 12 minutes.
- Top the Brie and serve: Using 2 long spatulas, transfer Brie to a shallow serving bowl. Spoon apple mixture over Brie; sprinkle with pistachios. Serve with crackers and/or crostini.
