BBQ Beef Sliders with Creamy Coleslaw

Ingredients:
For the Coleslaw:

3 cups coleslaw mix
1/2 medium red onion, chopped (about 2/3 cup)
1/8 teaspoon celery seed
1/4 teaspoon pepper
1/3 cup coleslaw salad dressing

For the Sandwiches:
1 boneless beef chuck roast (2 pounds)
1 teaspoon salt
1/2 teaspoon pepper
1 can (6 ounces) tomato paste
1/4 cup water
1 teaspoon Worcestershire sauce
1 small onion, diced
1 cup barbecue sauce
12 slider buns or dinner rolls, split

Directions:
  1. Make the Coleslaw: In a large bowl, combine coleslaw mix, chopped red onion, celery seed, and pepper. Add the coleslaw dressing and toss everything together until evenly coated. Cover and refrigerate until ready to serve.
  2. Prepare the Beef: Season the beef roast with salt and pepper, then place it in a 5-quart slow cooker. In a small bowl, mix the tomato paste, water, and Worcestershire sauce. Pour this mixture over the roast and sprinkle with diced onion.
  3. Cook the Beef: Cover and cook on low for 6-8 hours, or until the meat is fork-tender. Once cooked, shred the beef directly in the slow cooker using two forks. Stir in the barbecue sauce and let it heat through.
  4. Assemble the Sliders: Pile the shredded beef onto the bottom halves of the buns, then top with a generous scoop of coleslaw. Place the bun tops on, and serve.
