- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup barbecue sauce
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh or frozen)
- 1 red bell pepper, chopped
- ½ cup red onion, thinly sliced
- ½ cup shredded cheddar cheese
- ÂĽ cup fresh cilantro, chopped
- 1 avocado, sliced (optional)
- ÂĽ cup barbecue sauce
- ÂĽ cup ranch dressing
- Cook the chicken: Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper, and cook for 6-7 minutes per side until fully cooked.
- Once the chicken is done, brush both sides with barbecue sauce and set aside to rest.
- Assemble the salad: In a large bowl, combine chopped lettuce, cherry tomatoes, corn, red bell pepper, red onion, shredded cheddar cheese, and cilantro.
- Slice the BBQ chicken and add it to the salad.
