Ingredients:
- 1 teaspoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- ¾ cup uncooked white rice
- 1½ cups low-sodium vegetable broth
- 3½ cups canned black beans, drained
- 1 teaspoon ground cumin
- ¼ teaspoon cayenne pepper
- Heat olive oil in a saucepan over medium-high heat. Add chopped onion and garlic; sauté until softened, about 4 minutes.
- Stir in the rice and cook for 2 minutes to lightly toast.
- Add the vegetable broth, bring to a boil, then reduce heat to a simmer. Cover and cook until the rice is tender and liquid is absorbed, about 20 minutes.
- Stir in the black beans, cumin, and cayenne. Cook for a few more minutes until beans are heated through.
- Serve warm, as a main or side.
