Ingredients:
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons blackened seasoning
- Salt and pepper, to taste
- ¼ cup ranch dressing
- 1 tablespoon fresh parsley, chopped
- Prepare the chicken: Pat the chicken thighs dry and season generously with salt, pepper, and blackened seasoning on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Cook the chicken: Add the chicken thighs, skin-side down, and cook for 7–10 minutes per side until the skin is crispy, and the chicken is cooked through (internal temperature should reach 165°F/74°C).
- Remove the chicken from the skillet and let it rest for a few minutes.
