- 8 boneless, skinless chicken thighs (about 2 pounds)
- 2 jars (7.5 oz each) marinated quartered artichoke hearts, drained
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup shredded Parmesan cheese
- 2 tablespoons fresh parsley, minced
Directions:
- Preheat your broiler.
- In a large mixing bowl, toss together the chicken thighs and artichokes with the olive oil, salt, and pepper until evenly coated.
- Spread the mixture onto a broiler pan in a single layer.
- Broil about 3 inches from the heat source for 8–10 minutes, turning the chicken and artichokes halfway through. The chicken should reach an internal temperature of 170°F.
- Sprinkle the Parmesan over everything and return to the broiler for 1–2 more minutes, just until the cheese melts and turns golden.
