Buffalo Chicken Grain Bowl

Craving a tasty, satisfying meal that’s easy to prepare? This Buffalo Chicken Grain Bowl is the perfect combination of bold flavors and healthy ingredients, making it a great choice for any time you need a quick and delicious bite!

Ingredients:
  • ⅔ cup cooked whole-wheat couscous (or substitute with white/brown/red rice or quinoa, if preferred)
  • 2 tablespoons honey-mustard vinaigrette, divided
  • 1 roasted chicken thigh, sliced
  • 2 stalks celery, chopped
  • 1 carrot, peeled and cut into ribbons with a vegetable peeler
  • 2 tablespoons crumbled blue cheese (or substitute with feta cheese or goat cheese if preferred)
  • Hot sauce, to taste
Directions:
  1. In a medium sealable container, combine the cooked couscous and 1 tablespoon of the dressing.
  2. Layer on the roasted chicken, chopped celery, carrot ribbons, and blue cheese (or your choice of substitute).
  3. Drizzle with the remaining 1 tablespoon of dressing.
  4. Seal the container and refrigerate for up to 5 days.
  5. Before serving, top with hot sauce to your liking for that extra kick!
