Cajun Cabbage Skillet

This sizzling, flavor-packed skillet dish brings a zesty Southern kick to your table.

Ingredients:
  • 2 tablespoons canola oil
  • 8 ounces chicken andouille sausages, sliced diagonally 1/4-inch thick (about 1 heaping cup)
  • 1 small yellow onion, thinly sliced (about 2 scant cups)
  • Kosher salt
  • 1/2 small head green cabbage, cored, halved crosswise and sliced 1/4-inch thick (about 6 cups)
  • 1/4 teaspoon crushed red pepper
  • 2 cloves garlic, minced
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon unsalted butter
  • 1/2 small sweet-tart apple such as Gala or McIntosh, cored and sliced 1/8-inch thick (about 3/4 cup)
  • 1 large scallion, thinly sliced (about 1/4 cup)
  • Hot sauce, for serving
Method:
1. Cook the Sausage

Heat a cast-iron skillet over medium-high. Add oil, then brown sausage slices (2 minutes per side). Remove and set aside.

2. Sauté Onion & Cabbage
Add onion, water, and salt to the pan, scraping up browned bits. Cook until softened (5-7 min). Stir in cabbage, red pepper, and salt; cook until crisp-tender (6-8 min), adding water if needed.

3. Finish the Dish
Add garlic and vinegar, cooking until vinegar evaporates (~1 min). Stir in butter, then return sausage with apple. Cook until apples soften (3-4 min).

4. Serve
Top with scallions and serve with hot sauce.
