Cappuccino Mousse Trifle

Sometimes you just need to treat yourself—and this dessert proves you can do it without fuss or guilt. Creamy, coffee-kissed layers of pudding, pound cake, and whipped topping make this trifle look like something from a bakery window… yet it’s simple enough to whip up in minutes and light enough to enjoy every once in a while.

Ingredients:
  • 2½ cups cold milk
  • ⅓ cup instant coffee granules
  • 2 packages (3.4 ounces each) instant vanilla pudding mix
  • 1 carton (16 ounces) frozen whipped topping, thawed, divided
  • 2 loaves (10¾ ounces each) frozen pound cake, thawed and cubed
  • 1 ounce semisweet chocolate, grated
  • ¼ teaspoon ground cinnamon
Directions:
  1. In a large bowl, stir the milk and coffee granules until dissolved; remove 1 cup and set aside.
  2. Add the pudding mix to the remaining milk mixture and beat on low speed for 2 minutes, until thickened. Fold in half of the whipped topping.
  3. In a large trifle or glass serving bowl, layer one-third of the cake cubes, one-third of the reserved milk mixture, one-third of the pudding mixture, and a sprinkle of grated chocolate.
  4. Repeat the layers twice more.
  5. Top with the remaining whipped topping and chocolate, then dust lightly with cinnamon.
  6. Cover and refrigerate until ready to serve.
