Ingredients:
- 1 cup rolled oats
- ½ cup unsweetened, no-salt-added almond butter
- ¼ cup caramel sauce
- ¼ teaspoon salt
- 6 tablespoons mini semisweet chocolate chips, divided
- 6 tablespoons unsweetened shredded coconut, divided
Directions:
- In a medium bowl, combine oats, almond butter, caramel sauce, salt, 3 tablespoons of chocolate chips, and 3 tablespoons of shredded coconut. Stir until well mixed.
- Roll the mixture into balls, using a heaping tablespoon for each, and place them on a parchment-lined baking sheet.
- In a skillet over medium heat, toast the remaining 3 tablespoons of coconut, stirring frequently, until golden brown (about 2-3 minutes). Transfer to a shallow bowl.
- For the drizzle: Place the remaining 3 tablespoons of chocolate chips in a microwave-safe bowl. Microwave on High for 30 seconds, then stir. Repeat for another 30 seconds if needed. Spoon the melted chocolate into a small plastic bag and snip off a tiny corner. Drizzle the chocolate over the energy balls, then roll them in the toasted coconut.
