Caramel Delight Energy Balls

Craving the taste of a Girl Scout cookie but want a healthier twist? These Caramel Delight Energy Balls are a guilt-free version, packed with almond butter, caramel, and toasted coconut—making for a snack that’s as delicious as it is energizing. Ideal for a quick bite or a little indulgence during the day!

Ingredients:
  • 1 cup rolled oats
  • ½ cup unsweetened, no-salt-added almond butter
  • ¼ cup caramel sauce
  • ¼ teaspoon salt
  • 6 tablespoons mini semisweet chocolate chips, divided
  • 6 tablespoons unsweetened shredded coconut, divided

Directions:
  1. In a medium bowl, combine oats, almond butter, caramel sauce, salt, 3 tablespoons of chocolate chips, and 3 tablespoons of shredded coconut. Stir until well mixed.
  2. Roll the mixture into balls, using a heaping tablespoon for each, and place them on a parchment-lined baking sheet.
  3. In a skillet over medium heat, toast the remaining 3 tablespoons of coconut, stirring frequently, until golden brown (about 2-3 minutes). Transfer to a shallow bowl.
  4. For the drizzle: Place the remaining 3 tablespoons of chocolate chips in a microwave-safe bowl. Microwave on High for 30 seconds, then stir. Repeat for another 30 seconds if needed. Spoon the melted chocolate into a small plastic bag and snip off a tiny corner. Drizzle the chocolate over the energy balls, then roll them in the toasted coconut.
  5. Let the chocolate set before serving.
