Ingredients:
- 1 cup pitted dates
- ½ cup old-fashioned rolled oats
- ¼ cup chopped pecans
- ¼ cup chia seeds
- 2 medium carrots (about 4 oz.), finely chopped
- 1 teaspoon vanilla extract
- ¾ teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground turmeric
- ¼ teaspoon salt
- Pinch of ground pepper
- In a food processor, combine the dates, oats, pecans, and chia seeds. Pulse until everything is finely chopped and well blended.
- Add the carrots, vanilla, cinnamon, ginger, turmeric, salt, and pepper. Process again until the mixture forms a thick paste.
- Roll into balls, using about 1 tablespoon of mixture for each. Store in an airtight container in the refrigerator.
