Carrot Cake Energy Bites

Sometimes you just need a little bite of something sweet that won’t weigh you down. These Carrot Cake Energy Bites capture the cozy, spiced flavor of classic carrot cake—without the baking, the frosting, or the guilt.

Servings: 22 bites

Ingredients:
  • 1 cup pitted dates
  • ½ cup old-fashioned rolled oats
  • ¼ cup chopped pecans
  • ¼ cup chia seeds
  • 2 medium carrots (about 4 oz.), finely chopped
  • 1 teaspoon vanilla extract
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon salt
  • Pinch of ground pepper
Directions:
  1. In a food processor, combine the dates, oats, pecans, and chia seeds. Pulse until everything is finely chopped and well blended.
  2. Add the carrots, vanilla, cinnamon, ginger, turmeric, salt, and pepper. Process again until the mixture forms a thick paste.
  3. Roll into balls, using about 1 tablespoon of mixture for each. Store in an airtight container in the refrigerator.
