Carrot Fries

Who says fries have to be made from potatoes? These roasted carrot fries are crispy, flavorful, and paired with a creamy Greek yogurt chive dip that makes every bite irresistible. A deliciously simple way to add more veggies to your plate—without sacrificing taste!

Ingredients: (Serves 1)
Carrot Fries:
2 large carrots
2 tablespoons olive oil
1 tablespoon fresh parsley, chopped
1 teaspoon paprika
1 teaspoon salt
1 teaspoon black pepper

Greek Yogurt Chive Dip:
1 cup plain Greek yogurt
1 tablespoon lemon juice
2 tablespoons chopped chives
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions:
  1. Preheat oven to 425°F.
  2. Cut carrots into fry-shaped pieces and toss in a large bowl with olive oil, parsley, paprika, salt, and pepper.
  3. Spread the carrots in a single layer on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  5. While the fries are baking, mix all dip ingredients in a small bowl. Refrigerate until ready to serve.
  6. Enjoy your crispy, flavorful carrot fries with the creamy chive dip!
