Carrot Ginger Soup

When the chill sets in, nothing soothes quite like a bowl of homemade soup. This carrot ginger blend is not only silky and comforting—it’s brimming with immune-boosting carrots and ginger, so every spoonful feels like a little support for your health.

Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • ½ medium yellow onion, chopped
  • ½ teaspoon sea salt
  • 3 garlic cloves, smashed
  • 1 pound carrots, roughly chopped
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon apple cider vinegar
  • 3 cups vegetable broth
  • Freshly ground black pepper
  • 1 teaspoon maple syrup (optional, for a touch of sweetness)
  • Coconut milk, for garnish (optional)

Instructions:
  1. In a large pot, heat the olive oil over medium heat. Add onion, salt, and a pinch of pepper; cook until softened, about 8 minutes.
  2. Stir in garlic and carrots. Cook another 8 minutes, stirring now and then.
  3. Add the ginger, apple cider vinegar, and broth. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  4. Let cool slightly, then transfer to a blender. Blend until smooth. Add water to thin if needed. For a sweeter touch, stir in maple syrup.
  5. Serve warm, with a drizzle of coconut milk if you like.
