- 2–3 large carrots, peeled
- 1 garlic clove, finely grated
- 1 tbsp sesame oil
- 1 tbsp rice vinegar (or apple cider vinegar)
- 1 tsp soy sauce (or coconut aminos for a lower-sodium option)
- 1–2 green onions, finely chopped
- 1–2 tsp chili crisp (more or less to taste)
- 1–2 tsp sesame seeds
- Peel the carrots into thin ribbons using a vegetable peeler and place them in a mixing bowl.
- Add grated garlic, green onions, sesame oil, vinegar, soy sauce, chili crisp, and sesame seeds directly into the bowl.
