Chicken Divan with Mayo

This creamy, comforting classic turns leftover chicken into a cozy weeknight favorite—ready in a flash!

Ingredients:
  • 8 cups frozen broccoli florets or chopped broccoli
  • 2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
  • 1 cup mayonnaise
  • 1 teaspoon lemon juice
  • 3 cups cubed cooked chicken
  • 1 cup shredded sharp cheddar cheese
  • 3/4 cup dry bread crumbs
  • 3 tablespoons butter, melted
  • 1 tablespoon sliced pimientos, optional
Method:
  1. Prep the Broccoli: Heat the oven to 325°F. Briefly boil broccoli in a large pot for 1 minute, then drain and set aside.
  2. Mix Ingredients: In a large bowl, mix the soup, mayonnaise, and lemon juice. Fold in the broccoli and chicken. Transfer the mixture to a greased 11x7-inch baking dish. Top with cheese. Combine bread crumbs with butter and sprinkle over the dish.
  3. Bake & Serve: Bake uncovered for about 30 minutes, or until golden and bubbly. Let it rest for 10 minutes before serving. Optionally, garnish with pimientos.
