Chicken Fiesta Salad

Colorful, hearty, and full of flavor—this dish brings all the fun of a fiesta right to your table!

Ingredients:
  • 2 skinless, boneless chicken breast halves
  • 1 (1.27 ounce) packet dry fajita seasoning, divided
  • 1 tablespoon vegetable oil
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (11 ounce) can Mexican-style corn
  • ½ cup salsa
  • 1 (10 ounce) package mixed salad greens
  • 1 onion, chopped
  • 1 tomato, cut into wedges
Method:
  1. Cook the Chicken
    Coat the chicken evenly with half of the fajita seasoning. In a skillet with heated oil over medium heat, cook the chicken for about 8 minutes per side, or until it's fully cooked. Then, remove it from the skillet and set it aside.
  2. Make the Warm Dressing
    In a large saucepan, combine the beans, corn, salsa, and the remaining fajita seasoning. Warm the mixture over medium heat, stirring until it's heated through.
  3. Assemble the Salad
    In a large bowl, toss together the greens, onion, and tomato. Slice the cooked chicken and place it on top of the salad. Finish by drizzling the warm bean and corn mixture over everything as your dressing.
