Chicken Fried Rice

Transform your leftover chicken into a delightful chicken fried rice that’s both quick and delicious! Packed with vibrant vegetables and flavorful sauces, this easy recipe is a perfect way to enjoy a satisfying meal that warms the heart and pleases the palate!
Ingredients:
1 tablespoon sunflower oil
3 eggs, beaten with some seasoning
11.5 ounces mixed stir-fry vegetables
1 tablespoon mild curry powder
5 ounces frozen sweet corn
21 ounces cooked rice (see tip below)
1 roasted chicken breast, finely shredded
2 tablespoons low-sodium soy sauce
2 tablespoons sweet chili sauce
2 tablespoons ketchup

Method:
- Heat a splash of oil in a large frying pan and pour in the beaten eggs. Swirl the pan to create a thin layer of egg and cook for a few minutes until set. Transfer to a chopping board, roll up, slice thinly, and set aside.
- Add a little more oil to the pan, then add the stir-fry vegetables, curry powder, and sweet corn with a splash of water. Cook for 1-2 minutes until the vegetables start to wilt, then transfer to a bowl. Add the remaining oil to the pan, then add the rice and shredded chicken. Mix well, then stir in the soy sauce, sweet chili sauce, ketchup, a splash of water, and some black pepper.
- Finally, add the eggs and vegetables, tossing everything together and heating until hot. Serve immediately in bowls. Enjoy!
