These Chicken Pesto Paninis are a fantastic way to enjoy a restaurant-style sandwich at home. Tender cooked chicken, fresh pesto, crisp bell pepper, zesty red onion, and melted Monterey Jack all press beautifully between focaccia for a perfectly golden, flavorful bite.

- 1 focaccia bread, quartered
- ½ cup prepared basil pesto
- 1 cup diced cooked chicken
- ½ cup diced green bell pepper
- ¼ cup diced red onion
- 1 cup shredded Monterey Jack cheese
- Preheat a panini press (or a grill pan) to medium–high heat.
- Slice each focaccia quarter horizontally.
- Spread pesto evenly on the cut sides of each piece.
- Layer chicken, bell pepper, red onion, and cheese on the bottom halves.
- Top with remaining focaccia pieces to form sandwiches.
- Grill for about 5 minutes, or until the bread is golden brown and cheese is melted.
