Chicken Pesto Paninis

These Chicken Pesto Paninis are a fantastic way to enjoy a restaurant-style sandwich at home. Tender cooked chicken, fresh pesto, crisp bell pepper, zesty red onion, and melted Monterey Jack all press beautifully between focaccia for a perfectly golden, flavorful bite.

Ingredients:
  • 1 focaccia bread, quartered
  • ½ cup prepared basil pesto
  • 1 cup diced cooked chicken
  • ½ cup diced green bell pepper
  • ¼ cup diced red onion
  • 1 cup shredded Monterey Jack cheese
Directions:
  1. Preheat a panini press (or a grill pan) to medium–high heat.
  2. Slice each focaccia quarter horizontally.
  3. Spread pesto evenly on the cut sides of each piece.
  4. Layer chicken, bell pepper, red onion, and cheese on the bottom halves.
  5. Top with remaining focaccia pieces to form sandwiches.
  6. Grill for about 5 minutes, or until the bread is golden brown and cheese is melted.
