Chickpea Snack Salad

Fresh, fast, and full of flavor—this little salad proves that healthy doesn’t have to mean complicated. In just five minutes, you can toss together a bright, tangy mix of chickpeas, tomatoes, and olives that’s perfect for a quick pick-me-up or light lunch.

Ingredients (Serves 1):
  • ½ cup canned chickpeas, rinsed and drained
  • ¼ cup grape tomatoes, halved
  • 2 pitted olives, sliced
  • 1 tablespoon red wine vinaigrette*
Directions:
  1. In a small bowl, combine chickpeas, tomatoes, and olives.
  2. Drizzle with vinaigrette and toss gently to coat.
  3. Enjoy right away or chill for a cool, refreshing bite later.
Tip – Make Your Own Vinaigrette:
Whisk together 1 tablespoon red wine vinegar, 2 tablespoons olive oil, a pinch of salt, pepper, and a dash of dried oregano or mustard for a quick homemade version.

Alternative ideas:
If you don’t have red wine vinaigrette on hand, you can swap in lemon juice with olive oil, balsamic vinaigrette, or even a light Italian dressing—all taste great with chickpeas!
