Chocolate Crinkle Cookies

Ingredients:
- 1 cup unsweetened cocoa powder
- 2 cups white sugar
- ½ cup vegetable oil
- 4 eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup confectioners’ sugar
- In a medium bowl, mix the cocoa, white sugar, and vegetable oil.
- Beat in the eggs one at a time, then stir in the vanilla.
- In another bowl, combine the flour, baking powder, and salt; gradually stir this into the cocoa mixture until fully blended.
- Cover the dough and chill for at least 4 hours.
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll dough into 1-inch balls, then coat each one with confectioners’ sugar.
- Place them 1 inch apart on the prepared baking sheets.
- Bake for 10 to 12 minutes. The edges should be firm, and the cookies should have that signature crinkled look.
- Cool on the baking sheet for a couple of minutes before transferring to wire racks.
