Ingredients:
- 1 ½ pounds skinless, boneless chicken breast halves
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 (13.5 ounce) can unsweetened coconut milk
- ÂĽ cup fresh lime juice
- 1 tablespoon brown sugar
- 2 teaspoons minced garlic
- 1 teaspoon grated fresh ginger
- 1 pinch red pepper flakes (optional)
- ÂĽ cup chopped fresh cilantro
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on both sides, about 6–7 minutes per side depending on thickness. Transfer chicken to a plate.
- In the same skillet, combine coconut milk, lime juice, brown sugar, garlic, ginger, and red pepper flakes. Stir well and bring to a simmer.
- Return chicken to skillet. Reduce heat to medium-low, cover, and simmer until chicken is fully cooked and the sauce thickens slightly, about 10–15 minutes.
- Sprinkle with chopped cilantro before serving.
