Coconut Lime Chicken

Craving something bright and tropical for dinner? 🍋🥥 This Coconut Lime Chicken is tender, zesty, and rich with a creamy coconut twist—perfect for shaking up your usual chicken routine!

Ingredients:
  • 1 ½ pounds skinless, boneless chicken breast halves
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 (13.5 ounce) can unsweetened coconut milk
  • ÂĽ cup fresh lime juice
  • 1 tablespoon brown sugar
  • 2 teaspoons minced garlic
  • 1 teaspoon grated fresh ginger
  • 1 pinch red pepper flakes (optional)
  • ÂĽ cup chopped fresh cilantro
Directions:
  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on both sides, about 6–7 minutes per side depending on thickness. Transfer chicken to a plate.
  3. In the same skillet, combine coconut milk, lime juice, brown sugar, garlic, ginger, and red pepper flakes. Stir well and bring to a simmer.
  4. Return chicken to skillet. Reduce heat to medium-low, cover, and simmer until chicken is fully cooked and the sauce thickens slightly, about 10–15 minutes.
  5. Sprinkle with chopped cilantro before serving.
