- ½ Tbsp butter
- ¼ onion, chopped
- ⅛ cup melted butter
- ⅛ cup all-purpose flour
- 1 cup milk
- 1 cup chicken stock
- ¾ cup coarsely chopped broccoli florets
- ½ cup matchstick-cut carrots
- ½ stalk celery, thinly sliced
- 1¼ cups shredded sharp Cheddar cheese
- Salt and ground black pepper, to taste
Directions:
- Sauté the onion: In a medium skillet, melt ½ Tbsp butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Set aside.
- Make the base: In a large saucepan, whisk together melted butter and flour over medium-low heat for 3–4 minutes. Add a splash of milk if the mixture gets too thick.
- Add liquids: Gradually whisk in milk, then stir in the chicken stock. Bring to a gentle simmer and cook until slightly thickened, about 15–20 minutes.
- Add veggies: Stir in broccoli, carrots, celery, and the cooked onion. Simmer until the vegetables are tender, about 10–15 minutes.
- Finish it off: Stir in the shredded cheddar until melted and creamy. Season with salt and pepper to taste.
