Creamy Chicken & Mushrooms

This Creamy Chicken & Mushrooms dish brings together tender chicken and savory mushrooms in a silky, comforting sauce. It’s a perfect weeknight recipe that feels like a treat but comes together with ease.

Ingredients:
  • Chicken cutlets (thin-sliced chicken breast)
  • Mixed mushrooms (cremini, shiitake, etc.)
  • Olive oil or cooking fat
  • Garlic
  • White wine (or substitute with broth + a splash of acid)
  • Cream or half-and-half
  • Seasonings (salt, pepper)

Directions:
  1. Brown chicken cutlets in a skillet until cooked most of the way through. Remove and set aside.
  2. In the same pan, sauté mushrooms (and garlic if used) until they release moisture and begin to brown.
  3. Deglaze the pan with white wine (or broth + acid), scraping up browned bits.
  4. Reduce the liquid slightly, then stir in cream or half-and-half to make a sauce.
  5. Return chicken to the pan and simmer briefly so everything melds together. Adjust seasoning to taste.
