Creamy Gnocchi with Spinach and Sausage

Ingredients:

1 package (16 oz) potato gnocchi (or your favorite medium-sized pasta)
2 tbsp olive oil
1 package (12 oz) fully cooked Italian chicken sausage, halved and sliced
2 shallots, finely chopped
2 garlic cloves, minced
1 cup white wine or chicken broth
1 tbsp cornstarch
1/2 cup reduced-sodium chicken broth
3 cups fresh baby spinach
1/2 cup heavy cream
1/4 cup shredded Parmesan cheese

Directions:

  1. Cook the gnocchi: Prepare gnocchi according to package instructions. Drain and set aside.
  2. Sauté sausage and shallots: Heat olive oil in a large skillet over medium-high heat. Add the sausage and shallots, cooking until the sausage is browned and the shallots are tender. Stir in the garlic and cook for 1 minute.
  3. Deglaze the pan: Pour in the wine and bring it to a boil. Cook for 3-4 minutes, letting the liquid reduce by half.
  4. Thicken the sauce: In a small bowl, mix cornstarch with chicken broth until smooth. Stir the mixture into the skillet, bringing it to a boil. Cook and stir for 1-2 minutes until thickened.
  5. Add the spinach and cream: Stir in the spinach and heavy cream, cooking until the spinach wilts.
  6. Combine and serve: Add the cooked gnocchi to the skillet and toss to coat. Heat through, then sprinkle with Parmesan cheese before serving.
