Crispy Cinnamon-Sugar Roll-Ups

Ingredients:
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 6 small (taco-size) flour tortillas
  • 3 tablespoons unsalted butter, softened, divided

Directions:
  1. In a small bowl, mix the brown sugar and cinnamon.
  2. Lay out the tortillas on a flat surface. Spread about 1 teaspoon of softened butter onto each tortilla.
  3. Sprinkle the cinnamon-sugar mixture evenly over the buttered tortillas.
  4. Roll up each tortilla tightly into a log.
  5. In a medium skillet over medium heat, melt the remaining 1 tablespoon of butter.
  6. Place the roll-ups seam-side down in the skillet. Cook until the underside is browned and crispy, about 2 minutes.
  7. Flip and cook the other side until browned, about 2 minutes more.
  8. Remove from the skillet and let cool slightly before serving.
