Crispy Mashed Potato Pancake

Got leftover mashed potatoes? Turn them into golden, crispy perfection! These Crispy Mashed Potato Pancakes are a simple, savory way to transform leftovers into something truly crave-worthy.

Ingredients:
  • 2 cups mashed potatoes
  • 1 cup shredded Cheddar cheese
  • 1 egg
  • ½ cup all-purpose flour
  • ½ cup chopped onion (optional)
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
Directions:
  1. In a medium bowl, mix together the mashed potatoes, Cheddar cheese, egg, flour, chopped onion (if using), salt, and pepper until well combined.
  2. Heat the vegetable oil in a skillet over medium heat.
  3. Drop heaping tablespoons of the potato mixture into the skillet and gently flatten into pancake shapes.
  4. Fry each pancake for about 3 minutes on each side, or until golden brown and crispy.
  5. Remove and drain on paper towels before serving.
