Crispy Potato Pancakes

Ingredients:

2 medium potatoes, peeled
1 large egg
1/3 cup chopped onion
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Canola oil (for frying)

Directions:
  1. Finely grate the potatoes and squeeze out any excess liquid. Transfer the grated potatoes to a large mixing bowl.
  2. Add the egg, chopped onion, flour, salt, pepper, and garlic powder. Mix until well combined.
  3. Heat about 1/8 inch of canola oil in a large skillet over medium heat.
  4. Scoop the potato mixture by 1/4-cup portions into the skillet. Lightly press each portion to flatten it into a pancake shape.
  5. Fry the pancakes until golden brown on both sides, turning once. This usually takes about 2–3 minutes per side.
  6. Serve hot and enjoy immediately—perfect with sour cream or applesauce on the side!
