Crunchy Oven-Baked Tilapia

Crispy on the outside, tender on the inside—this easy oven-baked tilapia brings big flavor without the fuss! A zesty lime-infused coating and crunchy panko crust make it a perfect light and delicious meal for any night of the week.

Ingredients:
  • 4 tilapia fillets (6 ounces each)
  • 1 tablespoon reduced-fat mayonnaise
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon grated lime zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • Cooking spray
  • 2 tablespoons minced fresh cilantro or parsley

Directions:
  1. Preheat the oven to 425°F. Lightly coat a baking sheet with cooking spray.
  2. Place the tilapia fillets on the prepared baking sheet.
  3. In a small bowl, mix the mayonnaise, lime juice, lime zest, salt, onion powder, and pepper.
  4. Spread the mayonnaise mixture evenly over each fillet.
  5. Sprinkle the fillets with panko breadcrumbs, then lightly spritz with cooking spray to help with crisping.
  6. Bake for 15-20 minutes, or until the fish flakes easily with a fork.
  7. Sprinkle with fresh cilantro or parsley before serving.
